Mini BBQ Meatloaves

1 cup BBQ sauce
½ cup salsa
½ medium onion, finely diced
1 bell pepper, finely diced
½ package mushrooms, finely diced, cooked, and drained
1.75 lbs ground meat (I do 50/50 beef and turkey)
1 cup panko bread crumbs
1 large egg, whisked with a splash of milk
1 tsp Worcestershire sauce
2 tbsp steak seasoning (optional)
Salt and pepper
Preheat the oven to 450 degrees.
Mix the BBQ sauce, salsa, and Worcestershire sauce and set aside.
In a separate bowl, mix the meat, veggies, bread crumbs, and the whisked egg. Add half of the BBQ sauce mix to the meat and mix well with your hands. Spray a 12-muffin pan (1/2 cup size) with olive oil. Fill each with the meat mixture. Top each mini meatloaf with an extra spoonful of the BBQ sauce and bake for 20-25 minutes. The sauce will bubble over, so you might want to put a baking sheet under the muffin pan.
***She serves these with colcannon, which is basically just buttery mashed potatoes with wilted spinach and kale mixed in – another favorite way to sneak in the veggies!
